8 sprigs

chuck roast
olive oil divided
garlic
Marsala cooking wine
Rosemary
low-sodium Soy sauce
ground black pepper
ground ginger
onion sliced


Polynesian Pot Roast

Instructions

Rub roast well with 2 tbsp. olive oil and chopped garlic. Place in a deep bowl and add wine, soy sauce, pepper, ginger and rosemary. Marinate inthe refrigerator for 8-24 hours turning meat frequently.

Heat 5 tbsp. olive oil in a heavy pot and brown roast on all sides. Add onion, cloves amd 1/2 cup of marinade. Cover and simmer for 1 1/2 hours. Add remaining marinade and continue cooking until the meat is tender.
