Pepperoni Casserole
Instructions
Saute mushrooms in some olive oil until soft and tender, remove from skillet, set aside. Brown ground beef in hot skillet, drain grease and return meat to skillet. Add garlic, onion celery, salt, pepper and seasoning. Increase heat, add broth and stir to combine while getting all the flavor from the bottom of the pan. Continue cooking until liquid is reduced by half. Stir in ThickenThin and mix to combine. Liquid will thicken into a sauce. Remove from heat.
In a 9 x 13 (glass) baking dish that has been sprayed with cooking spray, spread half the meat mixture across the bottom. Place a single layer of pepperoni slices across the meat, using about half the pepperoni. Top with sauteed mushrooms. Sprinkle with shredded pepper jack cheese. Top with another layer of pepperoni slices, using the remaining pepperoni slices. Add remaining meat mixture, top with shredded cheddar cheese. In a small stream, pour beaten egg over top of casserole.
Bake in preheated 350 degree oven for 45 minutes or until top of cheese is lightly browned. Cut into 8 servings. Serve with lettuce salad.
