lean ground pork
sea salt, garlic powder, and ground pepper
white onion grated
cauliflower florets, grated
Egg
crushed pork rinds
Flax meal


Mock Porcupine Meatballs

Instructions

Mix meat, seasonings, egg and veggies with an electric mixer until very well blended. Then incorporate the pork rinds and flax meal with a potato masher. Browned two sides of the meatballs in a covered frypan with pork fat until almost cooked through. Transfer meatballs and juice (minus the fat) to a large pot, cover with a canned low-carb spaghetti sauce and slowly simmered covered for one hour.
