| 1 1/2 lbs 1 C 1/2 2 1/4 C 1/2 tsp. 1/2 tsp. 2 tlbsp 1 tsp. 1/4 C Optional | Ground beef Crushed pork rinds Chopped onion Eggs Parmesan cheese Salt Black pepper Chopped parsley Granulated garlic Heavy cream Beef stock/tomato juice to moisten. |
Basic Low Carb Meatballs

Instructions
Place all ingredients in a bowl and mix to combine. Allow to rest for a few minutes after combining ingredients, this will "tighten" the mixture as pork rinds will absorb the moisture. Form into small meatballs for appetizers or larger size for entree. Meatballs may be browned in oil in a skillet then sauced and finished in the oven or simply baked on a sheet tray in the oven. If simply baking, place meatballs on a sheet tray and bake at 350 degrees C for 20-30 minutes. Remove from oven and allow to rest for 5 minutes, then transfer to a baking dish and pour finished sauce over meatballs. Recipe may be altered by adding basil, thyme or other seasoning to taste.
