Instructions

Breadcrumbs

Let breadcrumbs dry out for a few hours and then toast at the lightest setting just to get it dried. Grind in processor or blender.

Make the Glaze

Heat olive oil in a saute pan around medium/med. low heat. add chopped onion and minced garlic, and saute until softened, about 5 minutes. Spoon mixture into a glass bowl to cool for about 15 minutes. Sit aside the glaze.

Meatloaf

Mix eggs with salt, pepper, thyme, mustard, worcestershire, and milk. Add to meat along with bread crumbs, parsley, and cooked onion/garlic mixture. Mix with a big fork or wooden spoon until evenly blended and mix doesn't stick to bowl (you may need to add another Tbsp. of bread crumbs at this point). Pat mix into 9"x5" loaf pan and brush with the glaze. Cook for at least an hour, or until your meat thermometer reads 160*.

You can also make gravy out of all the drippings. Use a brown gravy mix and add all the drippings you like.
